Some of you have asked for the recipe for sticky date pudding and after trying a couple of different versions I settled on this one as being easy and good.
Sticky Date Pudding
1 cup water1 cup chopped dates
1 teaspoon baking soda
1/4 butter
1 cup sugar
1 large egg
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 Pour boiling water over dates and baking soda in small bowl, mix and let stand until lukewarm.
2 cream butter and sugar in medium bowl until light and creamy. Beat in eggs and vanilla. Combine flour, baking powder and salt. Add to creamed mixture alternately with date mixture, making 3 dry and two liquid additions. Mix well. Spread evenly in prepared pan(9 inch square),greased.
3 Bake 40 to 45 minutes at 350.
.
Toffee sauce
1/2 cup butter
1 cup brown sugar-(I use less)
3/4 cup whipping cream
1/2 teaspoon vanilla
Melt butter and dissolve sugar over medium heat
add cream and vanilla
simmer 5 minutes until slightly thickened
Serve warm over sticky date pudding
Enjoy!
