Recipe for Sticky Date Pudding

Some of you have asked for the recipe for sticky date pudding and after trying a couple of different versions I settled on this one as being easy and good.

Sticky Date Pudding

1 cup water

1 cup chopped dates

1 teaspoon baking soda

1/4 butter

1 cup sugar

1 large egg

1 teaspoon vanilla

1 1/2 cup flour

1 teaspoon baking powder
1/2 teaspoon salt


1 Pour boiling water over dates and baking soda in small bowl,mix and let stand until lukewarm.
2 cream butter and sugar in medium bowl until light and creamy. Beat in eggs and vanilla. Combine flour, baking powder and salt. Add to creamed mixture alternately with date mixture,making 3 dry and two liquid additions. Mix well. Spread evenly in prepared pan(9 inch square),greased.

3 Bake 40 to 45 minutes at 350.

Toffee sauce

1/2 cup butter
1 cup brown sugar-(I use less)
3/4 cup whipping cream
1/2 teaspoon vanilla

Melt butter and dissolve sugar over medium heat
add cream and vanilla

simmer 5 minutes until slightly thickened

Serve warm over sticky date pudding

Enjoy!
