Swedish Butter Balls

Hello everyone,

It was a mild but very rainy day here today so I thought it would be a good day to bake some cookies for the annual cookie exchange that I have been in the past few years. I am making Swedish Butter Balls again this year because not only are they good but they are easy to make too.

We might as well try one with a cup of tea.

Now I will be nice and share the recipe for these lovely melt in your mouth Swedish Butterballs.

preheat oven to 400 degrees cookie sheet ungreased

1 cup butter,softened

1/2cup sifted icing sugar

1 teaspoon vanilla

2 1/4 cups flour

1 cup finely chopped pecans or hazelnuts or almonds

1. cream butter,icing sugar and vanilla throughly. Add flour. Mix well. Stir in nuts,mixing until smooth.

2. Shape dough into 1 inch balls. place on cookie sheet.Bake for 8-12 minutes at 400 degrees until light golden. Cool and then roll in icing sugar .

These freeze well.

This recipe came from the Robin Hood Baking Festival ccokbook -one of my favorites.

Carolyn....This is a coicidence! I have been looking for an easy cookie to make for my upcoming cookie exchange and I read your post and I think I found it! They look delicious and easy to make! I love your cloche too! I will have to visit my TJMaxx to see if they have one of those!~Patti

This is a favorite cookie at Linderhof only we use prairie pecans and we call them either Swedish Tea Cakes or Mexican Wedding Cakes -- by whatever name, they are a good cookie for tea or for the Christmas cookie plate!

Beautiful pictures and how clever to put them in a cloche!

Oh, how fabulous are your cloches filled with those yummy snowballs!!!
I too make snowballs from my grandmother's recipe that was handed down thru my mother.
Since this is the first year that I have several cloches, I will put my snowballs in my cloche and hope they look as beautiful as yours!

Thank you so much for the recipe Carolyn. My daughter and I went to a Nativity display last night and they were serving these and my daughter asked me if I had a recipe for them. Now I do! Your pictures are all just yummy.

Sounds very easy to bake, I will have a try mýself. Do you know where this recipe is originated from? Although I´m living in Sweden I´ve never heard of "Swedish Butter Balls" before. I kind of recognize the ingredients though but maybe we just make them in a different shape or something...can´t put my finger on it :)

I used to make these and misplaced the recipe; thanks so much for posting. I love the fact that you can freeze them. Perfect with a cup of tea.

Hi Carolyn,

Your butterballs look very decorative in your cloche! They look tasty too! I have never seen cookies like this before. I will print your recipe and try them out in the Christmas holiday. I think the girls will enjoy preparing them. I will have to change the cups into grams first, but I don't think that will be too difficult. Have a lovely weekend!
